Fast Food For Busy Families

Feeding a family is a big job. Kids want to have food on the table three times a day, seven days a week. Mom knows she needs a bunch of emergency recipes that can easily be created in minutes. When you're running late, and time's running out, you want meals that Dad can put together, too. Here are some fast meal ideas that you'll love.

Dunk It: Lucky for us, kids love dip. Cut some fresh cucumbers, carrots, zucchini, broccoli, celery, and bell peppers and serve them with ranch dressing. Even finicky veggie-haters will eat their veggies with dressing on them.

Sandwich Building 101: Your child will love experimenting with whatever you have on hand to build a sandwich. Use buns, waffles, bagels, English muffins, or dinner rolls to begin with, or anything you have on hand. Now you can start adding peanut butter, fruit, meat slices, vegetables, cheese, hummus, fried eggs, scrambled eggs, or hard boiled eggs, or whatever jumps out of the refrigerator at you. Let your child give it a try and remember, it is a work in progress.

Plenty O' Noodles: Noodles often are the launching point for a faster-than-fast meal. Start by cooking up your noodles while you dig in your pantry for items to add. How about some leftover chicken, some chick peas, cut up celery, and a drizzle of Italian dressing and you have a salad. Just melting some butter into your hot noodles and adding some Parmesan cheese gives you a wonderful Pasta a'la Parmesana. I'm also fond of adding some fire roasted tomatoes or spaghetti sauce to buttered noodles, topping with some shredded cheese, and warming it on the stove just long enough to melt the cheese.

Bundle Up: Flour or corn tortillas make a great start for creating a meal in moments. Grab your leftover chicken, veggies, beans, or anything you happen to have, heat it up, top it with cheese, and roll it up. You have a fantastic wrap, just like the food court!

Spuds from Heaven: Potatoes are a meal waiting to happen. Microwave a potato, pile on cheese of any sort (cheddar, mozzarella, cottage cheese) and some meat, veggies, or even salsa or sunflower seeds, and you have a delicious dinner.

Soup Warms the Soul: Fill a pan with broth and veggies. Then, just throw in whatever you have in the house, meat or beans, leftovers, a can of diced tomatoes, noodles or rice, and spices. You just made soup in minutes.

End Your Day With A Good Start: Breakfast is more fun at night! A big bowl of cereal, with fruit, English muffin, and a glass of juice will make everyone comfy cozy. Fry up a batch of bacon and eggs with pancakes and watch your family dig right in. Night time is a great time to have a hearty breakfast.
